Erika grew up in Portland and has always had a love of all things food. Many of her early childhood memories take place in her grandmother’s kitchen making pies, peeling apples for applesauce, and sitting at her kitchen table stemming green beans picked from her garden. A graduate from the University of Oregon in 1999 (Go Ducks!), and later attended the former Western Culinary Institute where she graduated with honors in 2002.
Erika lives in Tualatin with her husband, 2 children, and dog. She loves hiking, puzzles, watching football, and cooking with her kids. She specializes in getting children to eat their veggies (sometimes without them even knowing it!), and while most people spend their summers outdoors in the sun, she spends hers in the kitchen…canning. Applesauce, jam, salsa, tomato sauce, ketchup, barbecue sauce, pickles, green beans, even Bloody Mary mix…you name it, she can can it. She is a a DIY’er in the kitchen and nothing makes her happier than a well stocked pantry full of homemade food.
